Baked Vegan Donuts with Mulberry Coconut Glaze


Donuts time! Doughnuts or donuts? Same thing! These Baked Vegan Donuts with Mulberry Coconut Glaze are made of cake batter, but not fried. You know my mission, so I do my best to bring you tasty guilt-free desserts. Food should be enjoyed, so why not make it possible in a healthy but delicious way. Love my challenging mission! :)

These donuts came to be just because I felt it’s the right time to create a donut recipe. My first ever donut recipe. I expected it to be harder, but honestly, it wasn’t. The only challenge that I knew I’ll have was the gluten-free part. I’ve practiced some more by now, and I’m getting the feel of it. I’m getting better with each gluten-free baking practice. Boy do I likes to bake now! I can’t stop. Someone stop me! Haha! My amazing friends wouldn’t agree, though. :) They seem to enjoy the treats that I make.

 So, my friends, this recipe is super easy to achieve. Most of the ingredients that I’ve included are the regular ones that you would use on a plant-based diet. All ingredients are mixed together in one single bowl – dry ones first, followed by the wet ones. The basics of a cake making.  The only thing you might not have around are donuts baking pans or silicone molds. A lot of home goods stores carry those so you shouldn’t have difficulty in getting them.

Donuts are easy to make and do not take a lot of time, in my opinion. I know that sometimes it’s easier and tempting to get the sticky, deep fried donuts. You can do that if you chose to, but also try to bake your own and see how easy it is.

 It feels good when you know that the treat you’re enjoying is made by you. You’re aware of every single ingredient that goes in the recipe and this way you’re not bombarding your body with unknown, hard to spell ingredients that usually go into a store-bought treat. You are in control of what goes in your food, and that means that you’re doing your body a favour. There are exceptions, always, and setting up a healthy lifestyle takes time, effort, and planning, but it’s something that you and I need to work on continuously. New day, new challenges. We might fail, but we can always make a choice to start again and try to do better. The food choices we make dictate the health state of our bodies. Let’s just keep that in mind.
