No-Bake Strawberry, Vanilla & White Chia Seeds Mousse Cake
No bake cakes are perfect for the summer time. And here I am celebrating with you on the first day of July with this fantastic-looking and tasting cake. It’s a cake that I made for the Canada Day celebration. :)

Strawberries are still in season, and I’m fully taking advantage of them. I can’t seem to move away from strawberries actually. What’s not to like about strawberries, except if you’re allergic to them. Hope it’s not your case, and you’ll be able to check this cake out and even better, make it! If you are allergic to strawberries just skip them, make the base and mousse part and add your favourite seasonal fruits on top.
When it comes to creating healthy creams, icings, and mousses for my cakes, I like using ingredients that bring flavour to the table, aside from the nutritious benefits. The taste is everything. With this cake, I tried to create a healthy concept of a mousse, that is packed with vanilla flavour but has an additional nutritional value. And so, I decided to add white chia seeds to the mousse consistency. I was going to follow along with the cashew nuts formula, but I wanted to try something different. These little tiny seeds are so potent, and I love them so much. I use them a lot not only in breakfast recipes but in baking and as a natural thickening agent. They swell up by absorbing the liquid that they’re put in and make up a gel-like consistency. Isn’t it amazing that there are plants out there that have such capabilities to nourish us and replace the artificial agents made by man? It doesn’t come more natural than that. I love it!
I should let you know, though, that this cake is sweet enough but barely. If you’re looking for a sweeter taste, feel free to add an extra half cup of maple syrup. The vanilla mousse is guaranteed to satisfy your sweet tooth but in a healthy way. The natural sweetness that comes through the strawberry layers, on the bottom and the top, combines so well with the vanilla flavour coming through the mousse. The riper the strawberries you add, the better. Strawberries are naturally sweet, and I believe that you don’t need more then that if you’re looking for a healthy cake recipe like this one.
