Spicy Power Bowl with Miso-Lemon Dressing


Spicy Power Bowl at its best. It's a good looking and nutritious bowl of food. The lemon-miso dressing complements the umami and sweet flavours of the veggies and brings it to the next level of tasty and satisfying.

When was the last time when you had a hearty, nutritious and satisfying bowl of food?

Maybe even today. But who knows. Many times we're in a rush and try to make the best of what we have in our pantry or fridge, but not always, we end up happy and fulfilled with the meals we eat. It's not only about the flavour of the food, but also the texture. It's also a struggle to make a meal healthy and wholly satisfying.

It's all about balancing the ingredients that we put on our plate. We need to think about our protein intake, fibres, greens, fats.

The ingredients that I've added to this power bowl are well-thought of. I created it on a day when we were struggling to feel fulfilled by our usual meals. I won't pretend that eating a whole food plant-based diet is easy, but I know it's the best choice for us. Getting educated takes time, so it's just a matter of adjustment.

So, let's start to break down the delicious ingredients that you see right here in this lovely bowl.

Kale. It's not only a beautiful green but so powerful. Yes, we can call it a powerhouse. It's a nutrient-dense food, high in vitamins, minerals, antioxidants, and so on, but I know many people that struggle to like it due to its tough texture when consumed in a raw state. Eating it raw, however, is the best. You get the most nutrients out of this lovely green when raw.

Maybe you've already heard of a method called “massaging" the kale or prepping the kale before adding it to a salad. Well, that my friend is the trick. Massaging the kale will soften its texture, and it won't be as tough to chew. Usually lemon juice, or vinegar, and oil will do the trick. For my recipe, I've prepared an excellent rubbing oil that will make the taste of kale stand out. Make it, and you'll fall in love with eating kale. :)

The sweet potatoes and black beans come next, and I bet you're happy to dive into this part. They're both complex carbohydrates that are also high in fibre. We all love the starchiness of the sweet potatoes, especially when they're baked in the oven, or roasted, so they are simply irresistible. However, make sure you don't eat the whole pan of them, because let's be serious, they're that delicious. :) If adding both to your plate is too much, I suggest removing the black beans, and add a half of an avocado to your plate. I have friends that follow the keto diet, and having sweet potatoes and black beans together won't do. My point is, do what's best for your lifestyle, all right?

And, the most excellent rice there is out there, the forbidden black rice. I honestly can't say enough about black rice. I have it in the house at all times. I get a wild mix, and plain black rice usually. It's a healthy grain, so unique in flavour due to its nuttiness. Personally, it's my favourite. Finally, the salty-tangy lemon-miso dressing that binds all the flavours of this bowl together. Topping the roasted sweet potatoes with the tangy dressing is heaven. The roasted potatoes already have the kick of spice from the harissa seasoning, so adding the lemon-miso dressing makes it utterly delicious. Mixing all the ingredients of the bowl together with this fantastic dressing will make the eating of this Spicy Power Bowl a meal to remember.
