Vegan Peach & Pistachio Cake


Peaches scream summertime on and on. And since I don’t think that either of us are ready to say good-bye to summer, we must. Our summer has been mild this year, not too hot, but the sun has spoiled us with plenty of beautiful warm days.

I’ve taken myself a short break from my blog, and the last three weeks were great, but also life came in the way and spoiled my plans a little bit. Nothing else to do then be strong, and move on. I’m glad I’m back writing this post for you, my friends. I have so many ideas for the upcoming fall season, just to find the time for all of them.

I find that fruit cakes are very satisfying, and light doesn’t matter the time of the year. The good news is that frozen fruit works well to add to any cake, pies or tarts. Yes, fruit fresh is more textured, and you can add more fresh ones on top if you really must, but don’t feel limited by the fact that fresh peaches are ‘a must.’ This cake can work just fine with frozen peaches if you happen to run into this recipe during winter.  No better time to revive some summer flavours than in December. :)

Lately, I find that adding some texture to my cakes brings a more satisfying result. And, by texture I mean, either adding chunks of fruit, nuts, or chopped chocolate, or…other ingenious options.

In this case, the combination of pistachio nuts and peaches is a crowd-pleaser. If you ask me, I could add pistachios to everything, but I don’t. Everything in moderation, right? :)

Creating this recipe was a breeze, to be honest. I knew I was going for gluten-free as usual, naturally sweet, but leave the peaches to tell their story. At first, I wanted to add tiny chunks of peaches in the cake batter, but then I’ve changed my mind and decided to add slices just on top. I went for the pistachios in the cake and just peaches on top. And I wasn’t wrong. The result was so simple but super delicious.

The end result is a delicious soft cake perfect for any time of the day. For tea lovers, like myself, it’s the ideal treat along with a cup of tea, or if you’re looking for an extra indulgence, a scoop of ice cream or coconut cream will make it a bite to remember.

I know for sure that I’ll make this cake again in the current fall season. Peaches are still around now at the beginning of September, so I’ll go for another round soon. :)
