Vegan Vanilla & Cherry Cream Chocolate Tarts


These exquisite no bake Vegan Vanilla & Cherry Cream Chocolate Tarts were created to celebrate the cherry season fully. How about adding vanilla and chocolate to the fresh cherry sweetness? Yes, please!  The simple classic flavours in these tarts go so well together and don't need much more to make up a knockout healthy summer dessert.

 Did I say a knockout summer dessert? I did, indeed. You'll be surprised how easy it is to achieve this dessert right here. Follow along, and you'll see for yourself.

First comes the cherries. It's all about the bounty of cherries, my friends. The cherry season is so short, I think, but oh so sweet. Is that the reason why we eat buckets of cherries at the time? Our bellies were full of cherries for these past weeks. I went to the farm market and got two buckets (25 lbs/ approx. 12 kg each) of fresh ripe sweet cherries, then made some cherry jam, and I've also managed to create two delicious desserts that don't exclude chocolate. :)

I'm not sure about your preferred combo with cherries, but mine is chocolate. You can't go wrong with any combination. The classic one that I love and I'm bringing to you today is the cherries, almonds, chocolate and vanilla combination. 

I went for a simple no-bake three ingredients (not counting the salt) crust that's ready in less than 10 minutes. The dark chocolate in the crust adds a smooth bittersweet flavour that compliments the fresh, natural sweetness of the cherries. It's unbelievable how the pairing of almonds, dark chocolate and coconut oil can make up such a smooth tasting crust. I personally avoid butter, vegan butter, I should say. I can't make myself use it in my desserts. I just can't,  so I'm staying away from it when it comes to desserts. I try finding other healthy alternatives, also keeping the nutritional aspect in mind. It's not an easy task, but I love a good challenge when it comes to baking or desserts.

For the vanilla cherry cream filling, I kept it as simple as possible and added just enough ingredients to make up a creamy but light filling, allowing the fresh cherries to take charge of the flavour.  And oh the flavour, this filling has. The vanilla enhances the cherry flavour, but it's not overpowering. It's just enough to tickle your taste buds and let the fresh cherries run the tasting show.

Can you tell I love creating desserts? :) I think that in one of my very first blog posts, a few months back, I've stated that I love cooking savoury more than sweet. Well, let's revise that statement a little bit. The truth is that the sweet creations have taken over lately. I honestly don't have a clear plan of what I'll post. For now, I stick to my once a week recipe,  and I'll go where my inspiration and creativity takes me. I’ll surely expand, but I love spontaneity, and I want that to show in the recipes and content that I create.
