Vegan Veggie Rice Bowl with Braised Tofu


Aren’t veggies a pure joy to enjoy? Hope your answer is ‘Yes, they are.’ :)

Veggie lover here, so don’t need to convince me to eat my veggies. And, don’t worry, I’m not going to convince you to eat your veggies. Food choices should come natural, but we all have our experiences from where we were young, and our parents ‘made’ us eat our veggies. Fun times, right? 

Veggies are fun truly and really. Out of all the variety of veggies out there we all have our favourites and least favourites. I guess I owe my mother my love for all veggies. Really don’t know! I just know that with no fuss, no muss veggies are my friends since I can remember. 

One of the popular way to enjoy fresh veggies, or slightly cooked ones, is the famous ‘veggie bowl’ or ‘buddha bowl.’ There are no rules in what veggies, or toppings you can add, and the way of prepping them. You do you, remember?

I find these bowls so natural to create and super nourishing nevertheless. 

Even if I enjoy spending time in my kitchen, and creating delicious and healthy recipes, I’m also looking for a practical aspect that will appeal to the readers. Most of you don’t have a lot of time on your hands, but you’re fond of delicious home-cooked meals. 

 So, here’s a quick dinner, or lunch, that you can enjoy making in less than 30 minutes. This veggie bowl is a mix of East Asian flavours that I personally enjoy, but it can be easily transformed into any fusion of flavours that you prefer. The curry, turmeric, garlic, ginger flavours go so well together. All the sour, sweet, hot, and even peppery notes they create are so warming, and savoury tasting. Adding a few chilli pepper slices to the mix makes it an actual party of flavours. If you’re not so daring, you can skip the chilli peppers, of course. :)

The star veggies of my bowl are the purple cabbage and the Brussel sprouts. They not only complement each other in colour and texture, but they’re an excellent source of healthy carbs that are very filling and satisfying. One secret that I want to share with you is the seasoning of the veggies. Spice up your veggies before roasting, grilling, or broiling and forget the salt until later. Adding salt after the roasting or broiling process is a better idea, especially if you’re trying to watch your salt intake, but not only. The best way to consume our veggies is as close to their natural state as possible. They’re naturally sweet and flavoured, so we just need work in enhancing those flavours in our favour. I’ve concluded that if salt is added towards the end of the cooking process, or just after, the texture of the veggies keep better.

Regardless of the spices of my choice, please feel free to play around. You can easily add more or less, depending on your taste. But you get the idea, right? If you don’t fancy curry, skip it, and add more sweet paprika. If intense flavours are not your thing, add fresh herbs only, or find a way to enhance the flavours of the veggies whichever way you’d like. The important thing is to find flavours that complement each other and make the bowl of food sitting in front of you one that you’ll enjoy through and through.
