Coconut & Cold Brew Coffee Vegan Ice Cream


This simple, delicious and quick to make ice cream comes just in time with the start of the heat wave, and with the celebration of Mother’s day here in Canada. Such a special day to celebrate the wonderful precious woman in our life that we call ‘mother.’

I asked myself ‘What kind of dessert would my mom like?’. She loves coffee and ice cream. When she comes to visit in the summer months, she loves to have the delicious ice creams that we have around here. Some lovely brands make dairy-free ice creams, and I make sure she gets to have some of the best flavours and combinations. Few nights a week, ice cream for dinner on the patio it’s our thing!  :)

Too bad she won’t be able to taste my creation over this weekend, but next time she visits I’ll make it especially for her.

I’m pretty sure everyone loves ice cream, and I personally find that ice cream time is any time.

I’m not going to spoil your pleasure of mentioning the sugar amount that we can find in some ice creams. Let’s make it about the right kind of ice cream, the plant-based delicious ice creams shall we? I just know that you’re like me…reading the labels and making sure that the sugar amount is modest to low, and that unrefined sugars are part of the ingredients list, right?  But, sometimes, seldom…rarely I do slip on the slippery slope…or is it just me? :)

Hey, ice cream is there to be enjoyed and easy to make it yourself. It gets to be quite costly over an entire summer if you prefer the good, quality, clean brands as I do. During the summer months, I do make my own a few times a month. It’s just too easy to make. Lazy easy! Can we call it that?

The best part is that I get to choose whatever combinations I want. This is my first delicious easy to make ice cream recipe that I post on my blog, but rest assured that there will be many others. Summer has just begun!

Do you know much about cold brew coffee? It’s a simple process of steeping/ brewing the coffee grinds in cold filtered water. The process takes from 12-16 hours of brewing in the fridge, and all the lovely flavours and benefits of the coffee are released in the water. The cold brew coffee is known for being less acidic than the hot brewed coffee. I personally find cold brew coffee more smooth and enjoyable. I mostly cold brew my coffee during the summer months (when I chose to drink coffee).

The secret to an excellent cold brew coffee is a quality brand of organic coffee. Light roast is my go to usually. I have two top favourite brands that I use (but not going to mention here for obvious reasons), and the cold brew coffee is just the next level of deliciousness. I’m sure that you, coffee lovers out there know what I’m talking about. We could talk about coffee beans forever, right? :)

But, for this recipe, you can brew your coffee whichever way you like. Cold brewing does require that you have access to a cold brew coffee maker. So, don’t worry about this small detail. If you hot brew your coffee, just make sure you cool it down before you’re adding it to this ice cream recipe.

Also, if you don’t have access to coconut yogurt, just chose another plant-based yogurt that you have access to. All the ingredients used in this recipe are coconut based, and I do realize that some of you might not have access to some or most of the ingredients. Improvise with your best available choices. Instead of coconut milk powder, you can easily use shredded dry coconut. Just make sure you blend a little longer for the coconut to blend in and result in a creamy consistency. You can totally leave the shreds as a whole as well. They’re tasty regardless! Do try to use an unrefined type of sugar so you can keep the sugar content low (if you prefer). But again, you do you. I’ve created this recipe to show you that there are healthy ways to enjoy ice cream…totally delicious and guilt-free!

For making the ice cream it would be ideal to have an ice cream maker, but I personally don’t own one yet. Freezing is my way of making the ice creams. If you have an ice cream maker even better. Otherwise, the freezer works just fine.
