Vegan Fudgy Chocolate Quinoa Cake w/ Peanut Butter Frosting

This fudgy cake with peanut butter frosting is one super cake. Unbelievably decadent, rich and fudgy, with a velvety and delicious frosting, it’s surely a winner. It’s healthfully made, mindfully sweetened, and packed with nutritional value.

Happy Birthday, SOULFULLY TASTY! Today we’re celebrating one year since Soulfully Tasty has made its entrance into the food blogging world. It’s been a long year, with quite a few struggles, but the dream continues.

So, shall we celebrate with a Soulfully Tasty type of cake? Yes! I’m celebrating with you, dear readers, and I’m hoping that by now you’ve learned a little about my kind of recipes. I love to spoil you. Big time! I love to pack my recipes with flavour and surprise you with the best tastes. I love to create successful healthy recipes, but don’t sacrifice the element of a good looking plate of food. Food is to be enjoyed! Food is an essential part of our culture, and we need to show love and gratitude to the food we prepare. Food brings us together!

With all these said in mind, let’s move to the good part of the blog post. Yes, the cake, of course. Have you noticed the word quinoa in the title of this cake? I bet you did! Do not back out on me, all right? Hold on for a second. Quinoa is a superfood, yes, and it’s been raved about for years and years for a good reason. You just have to give it a chance and pay a bit of attention to the cooking method. It’s all in the prep and cooking method, my friends. And the secret is quite simple. It’s about the rinsing of this amazing grain, and pre-soaking method before cooking. In the recipe card today, I’ve included the necessary details on how to achieve well-cooked quinoa. Follow the instructions and the success is guaranteed. Also, please do check out this link to get more insight into how amazing this tiny grain is.

Can I tell you why I choose to make this cake for the blog anniversary? Well, I’ve been craving Reese’s cups for a while now. I’m not kidding. I mean serious cravings. The soft peanut buttery interior, and the chocolaty goodness. It would have been easier to just go buy them, one would say. However, I’m sticking to my nutritional values, and I preferred to create my own cake version of Reese’s cups but in a healthy version. And so I did.

The interior of this cake is chocolate heaven, my friends. It has the fudgy texture and richness that I was looking for, but also the dark chocolate-like taste that’s complimenting the smooth, salty peanut buttery frosting. I really think that it can’t get better than that. One bite and you’re sold!

The peanut butter frosting is a breeze to make. Three healthy ingredients that will give you the richest, smoothest frosting you can have. I decided to go for peanut butter powder instead of the classic peanut butter spread. The best kind, of course! Given that the cake is already rich in quinoa protein, adding the powder version cuts down on calories, and it has less fat instead of the regular peanut butter.

Plus, it gives the frosting a fluffier texture. You’ll be surprised! Look for an excellent organic and gluten-free brand, and you won’t be sorry. You can use it in baking and smoothies regularly. If you have a peanut butter addiction as I do, the powder version is a welcome change. :)

I hope you have no second thoughts about this cake ‘cause it’s such a good one. I’m delighted to share this fantastic recipe with you and celebrating the one anniversary of my food blog today.

I leave you with one encouragement, my sweet readers. Dare to dream, and don’t give up! Never stop dreaming, and try to take a step towards making your dream come true. It might not be a success after the first trial. Often it takes a lot of trials to make changes or accomplish goals. The ‘not giving up’ part is essential. Find the resources that work for you, and make things happen. If you believe in your dream, you’ll make others believe as well.

Stay healthy and happy!
