 The holidays are around the corner! What to prepare? So many ideas, so many options. 

Well, my friends, the dish that I’m bringing to you today is one of my options for you. It can be the star side dish at your table, along with other sides and mains if you have a big dinner to organize. It’s such a pleasing, comforting and healthy warm salad. You’ll reach for seconds guaranteed.

This salad is a combination of flavours and textures that go so well together. Potatoes and asparagus are a perfect match. Any roasted veggie is a show stopper, in my opinion. There is something about the roasting process that brings the best out of vegetables. 

 How about roasting without oil? What? Yes, no oil, my friends. The roasting process is natural, so why add unnecessary oil. Roasting is happening anyways. Old habits die hard! It can be done without losing the flavour aspect. Have you tried roasting without oil before? I dare you to try it. Try this recipe and let me know. :)

How about them potatoes? Why red and not white. You might be aware that the red potatoes stay firm throughout the cooking process in comparison to the white ones. Also, red potatoes are more nutritious than white and less sugary. Plus, in this case, the vibrant red skin of the potatoes looks perfect besides the lovely green asparagus. Aesthetic food does matter when you have guests over. Everyone enjoys a beautiful plate of food. It doesn’t necessarily have to be on a special occasion. Leaving the skin on during the roasting process adds a lot of texture to the final dish. The potato skin gets quite crispy and delicious.

Asparagus is not only beautiful to look at, but also quite delicious if you ask me. I eat it not only for the added nutritional value but I actually quite enjoy it. The first time I’ve tried it, I thought, ‘Wow.’ This is different but tasty! The secret in liking it does depend on the way you cook it. Roasting asparagus never fails. Paring it with a nice marinade, or garlic, it’s a winner. And, again, oil is not necessary. It’s a choice for sure, but not essential.

Oh, and now comes the lemon dill yogurt dressing, my friends. This dressing adds a different dimension to the taste of this salad. It brings all the flavours together. The roasted potatoes and asparagus have a natural sweetness to them, so adding the slight tangy cold dressing on top, makes it irresistible. You’ll find yourself taking one roasted potato and asparagus at the time, and dipping it in the yogurt dressing. I can promise you that because that’s what I did. :)
