This is such a colourful and super refreshing summer treat, my friends. The quickest breakfast you can have, all ready for you in the freezer. And the best part, you can also have it as an “emergency” dessert. On those days, when you have a craving, this healthy treat will satisfy your sweet tooth completely.
I don’t know about you, but I always like to be prepared for food. I can’t be thankful enough for the existence of the freezer. Frozen meals are such a life savior. It’s a luxury to have a fridge and a freezer nowadays that we can forget how privileged we are.
My family (myself included) craves “cold” treats all summer long. I’m finding new ways to freeze treats, even the sweets that I bake and prefer to freeze later. As I said, it’s best to stay prepared. :)
So, frozen yogurt bark is one of those cold treats that it’s super satisfying. The only downside is that it melts quickly, so you have to keep it chilled or frozen. If you’re planning a picnic, I suggest you get some ice packs and wrap them all around the yogurt bark until ready to serve. Best treat on a hot summer while relaxing at the beach or in the park.
Fresh berries during the berry season are simply the best. They can be costly, so I suggest that you use one or two types of berries, if three is a bit much for your budget. And, don’t be afraid to go for the frozen version if they’re out of season. There isn’t a wrong way to go about this. It’s such a simple treat to make.
The main reason for including dates to this recipe is adding a soft sweet texture besides the frozen taste of the berries. Berries can be slightly tart, so the balance of sweet and sour is met. And, since this bark is all about beautiful textures, nuts and additional coconut shreds or ribbons makes it complete. It’s the perfect bite!
