Green Curry Zucchini Soup with Kaffir Lime Leaves & Fresh Dill

The beautiful zucchinis, or otherwise called courgettes, are my favorite from the cucumber family. I love all the squash family, but maybe I’m fond of zucchini because I grew up eating them quite a lot. My mom used to make them pan fried, dipped in a crunchy batter. Who wouldn’t like them? I discovered later that it doesn’t matter the way they’re cooked. I’m just crazy about them!
I once said that if there would be a veggie that I couldn’t live without it would be zucchini. But then I realized that I actually can’t live without eggplants or cauliflower. Call me a veggie nut. I can’t honestly pick my favorite. I love ALL veggies. Still, the top spots are taken over by zucchinis and eggplants (which you’ll see a lot of on my blog :))
Back to this amazing soup. The method of cooking is one of the secrets for the flavor and richness added to the soup. What is that method? Not boiling the veggies straight ahead but broiling them. Yes, grilling or cook them in the oven.
Now, you could say…broiling takes time? Yes, it does, my friend! My question to you is: do you want a plain tasting ‘meh’ soup or an array of flavor so your entire family can enjoy? Who gets the credit for that beautiful cookery? You do! And, you should get the credit because your effort is rewarded with a healthy, tasty and nutritious meal that you can even save some of for your next meal.
The entire process is actually simple. Prepping the veggies only involves cleaning, roughly cutting them, season and place in the oven for 45 min. The veggie stock part is also effortless - just toss the needed ingredients into the pot and slowly bring to boil. Not difficult at all, you see?
The addition of the kaffir lime leaves is the actual secret ingredient of my soup.
These beautiful lime leaves give the soup a subtle citrus fragrance that will make you want for more. Then, comes the green curry paste that compliments the lime leaves and binds all the flavors in the soup.
Both, the lime leaves and green curry paste were carefully chosen because of the big flavors they bring to a dish. They really elevate the veggies that would otherwise taste bland on their own.
This lovely soup is one of my family’s favorite now. I get to make it every other week almost especially during the colder weather. It’s that comforting!
Besides, it’s so easy to pack for a quick lunch. I personally pack the soup in a jar and take it as my work lunch. If I feel like toasting some bread on the side, I do; otherwise, I just sip it and really get satisfied with the creaminess and delightful taste.
