Dark Chocolate Lemon Bar

Do you love lemons? I’m not sure what your answer is, but I like lemons. I didn’t grow up having access to lemons so when I did discover them, I thought lemons are fabulous.
Did you ever smell a lemon? I sure hope you did. I usually like to feel the scent of all the fruits that I buy. You can sense the ripeness of a fruit, the sweet or citrusy notes in this case. Lemons are sure sour, but have you noticed the beautiful floral undertones?
The lemons are so versatile, and they might be one of the most used from the citrus family.
I cook with lemons quite a bit. The fresh lemon juice is heavenly in desserts, homemade dressings, teas, drinks, and the list goes on.
And, the dark chocolate. I’m not going to start talking about my dark chocolate love because I won’t stop. :) You will notice yourselves that I do add quite a bit of dark chocolate to my recipes. The bitterness and few bits of sweetness are just heavenly in desserts. Dark chocolate is the right treat minus the high amount of sugar — the bitter the chocolate, the more antioxidants.
When I decided to make this lemon bar, I thought that it would be easy peasy. I wanted it to be a real treat of combining the lemon goodness with the dark chocolate richness, not too sweet but sweet enough.
This recipe ended up to become quite a challenge. After four (yes, four) trials I achieved the right lemony taste. It ended up not too sour but lemony enough to please the taste buds; sufficiently creamy to make the bite easy but not too soft of a dark chocolate cover.
The sugarless base was the greatest challenge of them all. I tried to make the base an easy no-bake one, low on sugar, but tasty enough to bind the two top layers and create a perfect lemony dark chocolate bite.
