Vegan Dark Chocolate & Fresh Mint Leaves Brownies

I’ve created this delicious brownie recipe with unrefined sugars, borderline sweet, gluten-free almond flour, dark chocolate chips, no added nuts, and the buzz ingredient, fresh organic mint leaves. Yes, I’ve incorporated fresh mint leaves in this brownie recipe. Convincing enough to give it a try?!
Where do I start with this brownie recipe? Everything about this recipe is just perfect. The craving for brownies is universal, and I really think it’s one of the most craved desserts on this planet. Do you agree?
This is my very first recipe development for a vegan brownie, but more to come. I have plans for some delightful plant-based brownies. The one I’m working on right now is incredible. Status is still ‘under development’ in the Soulfully Tasty ‘kitchen lab.’ All in good time! :)
I was so excited when I created this recipe; you wouldn’t believe it. Too funny to even share! :) I can get pretty animated in the kitchen when I’m in my ‘creative’ mode.
I knew what I wanted to find in a health-ish plant-based brownie, so on a Friday at 9:00 pm I told myself ‘now it’s the time to create that brownie.’ And I did!
What a thrill it was when the very first attempt was successful! First attempt! Wow! I didn’t expect that.
I’ve perfected it even more of course, and I’m delighted with the final version.
My intention with this brownie was to include only healthy quality ingredients, as I do with all my recipes, but keep it sugar-low as much as possible. Yes, even with unrefined sugar I'm pretty careful with the amounts that I add to my recipes.
I’m not going to go into the ‘why the sugar is bad for you’ issue, but because I do care for you I’m just going to link here my favourite article written by a Canadian nutritionist that I admire, and follow closely, in the health food community.
The brownie in itself it’s not sweet, my friends. It’s super rich in texture, moist, and fudgy. The tiny bits of melted dark chocolate chips are such a nice addition to the composition and the richness of this fantastic brownie. And, how can I forget about the beautiful fresh mint leaves? It’s such a surprise in the brownie that might go unnoticed at first, but it’ll please your senses most definitely. The mint leaves are not a strong presence, but just an undertone of a slightly minty taste.
Finally, while I was planning my brownie photo presentation, I decided to turn the photo shoot into a party, so I made a vegan caramel sauce to drizzle on top. And what a vegan caramel sauce it turned out to be!
Yes, of course, I used sugar, unrefined quality raw sugar because how else do you make a caramel sauce? As long as we do not have this sauce every day, every week we’re good. :)
Cheer up! It’s supposed to be a treat, one that you can enjoy, one that I urge you to make. Like right now? :) This brownie will not disappoint.
