Vegan Melon & Berries Breakfast Bowl

It’s summertime, hot weather, and we want something delicious, healthy and satisfying to start our mornings. Some breakfast ideas do get old, and we all know the drag and the big question ‘What can I have for breakfast?’
This breakfast bowl has only seasonal fruits that you can easily find at your market. The combination that I’m bringing to you is super tasty, and all flavours blend together so wonderfully. But, you can add the fruits of your choice depending on you have available. The cantaloupe you do need, or any type of yellow melon. All the flavours are built around the juiciness of the cantaloupe.
The Tuscan cantaloupe is my absolute favourite melon. It’s naturally sweet, and to me, it’s the perfect summer treat, dessert, snack, you name it. You can portion it, refrigerate it and take it on the go at work, at the park, beach, or road trips. It’s definitely a thirst-quenching fruit, and having melons handy is the best way to stay hydrated during the summer months. There are so many types of melons, and they all are a water-rich food, and some offer a small amount of fibre.
If you’re looking for some fibre intake, you can pick the honeydew that contains about 4 grams per serving (approx. one cup). It’s a smart, healthy and delicious snack idea.
I don’t think I need to tell you how tasty the melons are, right? I haven’t met anyone that doesn’t like melons. Any type is delicious period, and there are countless ways of consuming them.
So, let’s get straight to this mouthwatering breakfast bowl.
One tip before we dive in. For a refreshing cold bowl, make sure to refrigerate the melon, and the fruits ahead of time. That is if you prefer the fruits cold as I do.
You can choose the number of servings depending on how many people you prepare it for.
What’s in this breakfast bowl?
- Tuscan cantaloupe
- plain coconut yogurt (or your choice of plant-based yogurt)
- organic blueberries
- organic raspberries
- organic & sugar-free granola (or your favourite granola)
- bourbon barrel aged maple syrup
Step 1
Clean the cantaloupe skin thoroughly under running water, and wipe down with a kitchen or paper towel.
Place on a cutting board, and cut the cantaloupe in half, and then in round slices of approx. 0.5 - 1 inch/ 2 – 2.5 cm each, or the preferred thickness.
Using a spoon, scoop out the seeds from the middle of the slice, and place each slice on a plate.
Step 2
Fill up the slice gap with a good amount plant-based yogurt, or as much as desired.
Step 3
Top with one serving of granola, and all the berries you desire.
Drizzle some maple syrup on top, and there you have it.
