Vegan Mushroom and Leek Quiche w/ Potato Crust and Thyme Cream Sauce

It's a great brunch idea for Christmas, and not only. Quiche is a meal in itself that it can be served as a meal with a nice side of crunchy salad.
How do you like the idea of a potato crust instead of a traditional dough crust? Quiche is quite filling, and my idea of adding a potato crust came from wanting to use veggies only. Yes, potatoes are veggies, more like a super desired starchy rooted veggie. Everyone is a fan of potatoes. Everything is good about them, right?
Talking about potatoes in a dish is easy (I think). I've rarely met people that don't like potatoes. When it comes to mushrooms and leeks, I'm not sure about you guys, but I'm a fan as well. How about leeks? Do you feel meh about them? If you love onions, then leeks are your next best friend. They're so flavourful, in my opinion. You add them to a veggie broth, and everything changes. The flavours receive a specific onion-like sweetness that's just so pleasant. Leeks are not as strongly flavoured as onions, so you might actually like them better if you prefer a mild onion-like taste. When I talk about onions, I always think of one of my best friends that I just can't convince how wonderful onions are. She's not a fan and period. :) No further discussion.
Making this quiche does take some time, my friends. I'm one of those people that like everything home-cooked. I mean, come on? I do run this food blog created out of a pure passion for cooking. :) Yes, it does take a bit of prep, but it's so worth it. And let's not talk about the fact that it is vegan, and no oil used. It's a tasty and healthy quiche, friends. It doesn't take more than a slice to satisfy your need to eat something delicious and savoury.
The process is straight forward. Clean and cut, slice or chop all the veggies, prepare the potato crust first, saute the mushrooms, and leeks, prep the creamy filling, bake, and you're done. All in one sentence! :)
But, the pièce de résistance is the thyme cream sauce. I mean, I can't even begin to tell you how deeply flavoured and infused this cream is with all the thyme goodness. It's the cherry on top of a cake. It's the perfect topping for this quiche. Thyme is such an aromatic herb, my friends. I love all herbs, true, but I have a special love for thyme. It's like my own signature that I like to add to a dish. It can completely transform a meal, bring it to life.
This Mushroom & Leek Quiche is delicious on its own, but the addition of the thyme cream sauce makes it worthy for a feast, your feast. I couldn't be more thrilled to deliver this recipe to you. It's far from a common dish. It's a dish made to impress your taste buds guaranteed.
