Baked Pink Grapefruit with Dragon Fruit & Coconut Yogurt
Baked grapefruit? Sure thing!

Don’t feel bad for never thinking to bake pink grapefruit because until recently I haven’t either. It seems so simple, yet it’s not a treat that we think of too often to prepare.
Citrus is accessible year round, and so popular among all fruits. From the super popular oranges to lemons and limes, the possibilities of cooking and baking with citrus fruits are endless.
This breakfast idea that I’m bringing to you, here, it’s simple, and I think it’s what you need for this summer. Like I’ve mentioned already, baking grapefruit is a real treat once you try it. Try it once, and you’ll go back to it again and again.
I made this simple breakfast, on a weekend morning when I just looked around my pantry and wanted to create a fancy breakfast for myself. I and breakfast don’t ‘meet’ during the week days, but during the weekend we’re all over each other. :)
I don’t like to rush my time with breakfast in the weekends, but take time, sit down, use my fancy plates and cups, and just make it a party. Enough rushing during the week. Starting up on the right foot on Saturdays makes me feel good and pampered. Taking time to pamper yourself might seems like a luxury for some of you, and but it’s such a needed ‘treat.’ Kids or no kids, life is hectic for most of us nowadays. So, sit down and enjoy your meals at least over the weekends. :)
Bake some grapefruit for your next breakfast, my friends. So easy! Take a baking sheet, parchment paper, silicone baking mat, whatever you have in your house, cut up in half two or three grapefruits, sprinkle some unrefined sugar (always:)) on top, bake at 350° F (180°C) for 15 minutes and voila. Breakfast is served! You can add whatever your heart pleases on the side. There are so many options, from granola, oats, nuts and seeds etc. Regardless of your add-on, the baked grapefruit will be the star on your plate. You’ll be kidding yourself if you think you’ll have only a half, and you’ll be able to stop. :) Try it and see for yourself. It’s that good, yes!
The addition of the dragon fruit is optional, and in my case, it happened that I got it in the house, but you don’t have to add it. Just a serving suggestion, of course. I do recommend the healthy nuts and seeds to turn it into a nutritious meal, or snack.
If you don’t enjoy the fresh pink grapefruit because of the tartness, the baking of the grapefruit will change your mind. I’m a lemon lover and eat fresh lemons like apples :), so no problem here with fresh grapefruits. But, I do know people that stay away from grapefruits for the mentioned reason only.
No more! The caramelization happens during the baking process, and the natural sweetness of the grapefruit is accentuated, plus the browning on top due to the sprinkled unrefined sugar.

Serving: 2-3
Baked Grapefruit with Dragon Fruit and Coconut Yogurt(one serving):
- 2-3 pink grapefruits
- org raw coconut sugar (1/2 tsp or 4 grams for each half of grapefruit piece)
Preheat oven to 350° F (180°C)
Step 1
Wash the whole grapefruits, and dry with a paper towel. Cut the grapefruits in half, and place them side up on a parchment paper, or a baking silicone mat. If you find the cut halves too wobbly, cut 1-2 cm – ½ inch approx., off from the bottom.
Step 2
Sprinkle ½ tsp (4 g) on top of each half of grapefruit, and place in the preheated oven.
Leave to bake for 15 min max until the top of the grapefruits turn slightly brown, and the sugar is caramelized.
Step 3
Remove, and serve hot or cold.
Step 4
Serve with frozen coconut yogurt or any other preferred plant-based yogurt.
My topping options: raw org hemp seeds, org white chia seeds, beetroot powder.
